Thanksgiving LOW-Carb Cornbread Dressing

2 pkg. Atkins cornbread mix

1 lb. sausage browned and
crumbled

1 cup shredded cooked chicken

1 cup crushed pork rinds
-
1 stick butter
-
˝ cup toasted pecans
-
˝ cup chopped celery
-
˝ cup chopped onions
-
2 eggs
-
3 tbs. Sage
-
1 tbs. Thyme
-
˝ tbs. Pepper
-
˝ tbs. Salt
-
Chicken or turkey stock
Cook
the cornbread according to pkg. Directions; cool then slightly crumble.
Sauté the celery and onions in butter until transparent. Mix all the
ingredients in a large bowl using enough stock to moisten. Transfer into
baking dish; bake 1 hour or until golden brown. Oven at 350°.
